
INGREDIENTS
2 handfuls of pumpkin 1/2 cup of soaked cashews 1 tablespoon of psyllium husk 3 tablespoons of soy milk 1 clove of garlic 1 tablespoon of lemon juice 5 cherry tomatoes A large bowl roasted or any cooked veggies. I used cauliflower, onion, sweet potatoes, beetroot and broccoli
METHOD
Heat oven to 180 degrees celsius. In a small bowl cover psyllium husk with water. Steam pumpkin, once the pumpkin is cooked place into a blender along with cashews, psyllium husk, soy milk, garlic and lemon juice.
You can also add add a crust or pastry if you desire.
Pour into a pie dish.
Place the veggies on top along with the halved cherry tomatoes. Bake for 30 mins or until cooked.
