This recipe is so wholesome, yummy and easy.

You also can add or use any vegetables you'd like.

INGREDIENTS 1 red onion diced 2 cloves of garlic finely chopped

1/2 eggplant - diced 1 red capsicum - diced 1 teaspoon of chilli flakes 1/2 tablespoon of sweet paprika

1/2 tablespoon of aniseeds 1/3 cup of dates - chopped 1 teaspoon of salt 1 stock cube 1 can of diced tomatoes 1 bunch of parsley finely chopped

A big handful of pumpkin - diced HUMMUS 1 can of chickpeas

1 teaspoon of cumin powder 1/4 cup of lemon juice

2 garlic cloves 1 tablespoon of olive oil

2 teaspoons salt 1 tablespoon of tahini COUSCOUS 1/4 cup of goji berries 1/4 cup of toasted pine nuts

1 tablespoon of olive oil

METHOD - In a chasseur, tagine or large pot heat 1 tablespoon of oil. - Sautee onions, garlic, capsicum and eggplant with the spices and dates for 20 minutes stirring regularly. - Add stock, diced tomatoes, pumpkin and parsley. - Continue cooking for another 20 minutes or until pumpkin is cooked. - To make hummus blend all ingredients until smooth. - Cook couscous to packet instructions.

- Add pinenuts, olive oil and goji berries

I like to garnish with parsley, extra pinenuts and lemon
