INGREDIENTS 1 cup of raw soaked cashews (soak boiling water overnight or for at least an hour) 1/2 cup of thick coconut cream 1 cup of lemon juice Half a cup of maple syrup 3 drops of vanilla essence Half a cup of desiccated coconut
Half cup of pitted dates Half a cup of almonds Half a cup of oats 3 tablespoons of coconut oil METHOD Blend oats, coconut, dates, almonds and coconut oil. In a greased pie dish, mould the blended mix and place in the freezer for 50 minutes. Strain cashews and add to a blender with lemon juice, coconut cream, maple syrup and vanilla essence. Blend until smooth and creamy. Pour over the frozen base, and place back in the freezer until its set.
